Cheese Bank: Father and Son Set Up an Unusual Goat Farm in Kherson Region

In the Kherson region, there is an unusual bank – a cheese bank. Edward and Danilo Repilevsky, father and son, created the unique enterprise in Ukraine, writes “Agro-Center” with a reference to “Holos Krainy”.

The cheese bank is located in the village of Maryanivka, in the Kakhovsky district. To put it simply, it is a special storage facility with a stable microclimate. Two quintals of hard cheese have already been put there. And this is not common cheese. It is made from selected goat milk from two hundred goats of elite alpine breed from the new farm of the family enterprise.

“The domestic cheese that is currently being sold in shops and markets across the region is young, one-three months old. Besides, it is made of cow’s milk and, for the most part, not very good. We plan to keep goat cheese from one to five years, and only then offer it to connoisseurs and gourmets,”

said Danilo Repilevsky.

The farm and the cheese bank attract a lot of tourists. There were so many visitors that the owners opened a hostel and a cafe where visitors can taste local products.

Today, the Repilevsky family-owned business produces 48 varieties of cheese. They offer cheeses with herbs, olives, and even chocolate.

Goats are cared for in a special way here. There’s an automatic scratching device, climate control system, “smart” milking machines, as well as delicious diets specially designed by the scientists of the Institute of Livestock Breeding in the region of Askania-Nova.

“Some people think that goats are usually moody and capricious. Maybe that’s the way it is. But this is not true when it comes to our goat. They are very kind and friendly. They run towards people and even try to jump on their hands, just like children. How can anyone not like them?”

said the head of the farm Mykola Vretik.

The owners already have a new cheese factory and plan to buy more goats from France.
